Banana Shroom Bread

This is our go-to banana bread recipe with the added benefits of medicinal mushrooms for immunity boosting for the whole family!

Ingredients

50g Supreme Shrooms Mushroom Powder of your choice

1¾ cups spelt or wholemeal flour

½ teaspoon cinnamon powder

1 teaspoon baking soda

½ teaspoon salt

2 whole eggs

½ cup melted coconut oil

¼ cup raw honey

3 tablespoons pure maple syrup

¼ cup Greek yoghurt (or almond milk)

1 teaspoon vanilla bean paste

2 mashed up ripe bananas

¼ cup chopped dark chocolate

¼ cup chopped walnuts or pecans

1 extra banana sliced for decoration (optional)

Method:

  • Pre-heat oven to 160° and grease a loaf tin with coconut oil and dust with some flour till lightly coated

  • In a large bowl, using a hand whisk mix together the flour, cinnamon powder, mushroom powder, baking soda and salt. Set aside

  • In a separate bowl, place the eggs, coconut oil, honey, maple syrup, yoghurt (or milk) and vanilla bean paste and mix with a beater for about 1-2 minutes

  • With a wooden spoon, stir in the mashed bananas

  • Now add the flour mixture, chopped dark chocolate and nuts – combine well

  • Pour the batter into the dusted loaf tin and decorate the top with the extra sliced banana and sprinkle with extra cinnamon powder if desired

  • Bake for approximately 50 minutes or until skewer comes out clean

  • Place on cooling rack, then slice and serve
